Stir Fried Vegetables with Brown Rice and Red Lentils

Recipe

2 cups of Short Grain Brown Rice (Lundberg brand)

1/4 of a cup of red/green lentils

1/2 cup of Sweet Pepper (green,yellow and red)

2 tablespoon of Sofrito

1/2 cup of Asparagus

1 Tablespoon of Olive Oil

1 Teaspoon of Plum Sauce

1 Tablespoon of Soy Sauce

In a rice cooker add olive oil, sofrito and lentils.  Sautee the ingredients for 2 minutes then add the brown rice.  Cook brown rice in 3 1//2 cup of water or broth preferably in a rice cooker.

Dice your vegetables.  Pour olive oil in hot pan and  place  your vegetables inside.  Add the plum sauce and soy sauce, stir vegetables for 5 -7 minutes until you see vegetables glistening. Remove from heat.  When rice is fully cooked  serve yourself a plate and pour veggies on the rice.  Enjoy!

Shrimp Salad

Shrimp  Salad Recipe

1lb of Wild caught Jumbo Shrimp Cleaned

1/2 cup of olives

1 small onion

1/2 cup of cherry tomatoes

1/2 green, red, yellow sweet pepper

1 tablespoon of vinegar

2 tablespoon of olive oil

A pinch of salt (optional)

Boil water in a medium pot and add cleaned shrimp. While waiting for shrimp to cook, slice/dice small onion, pepper,tomatoes.

Get a bowl and place all ingredients inside. Add all ingredients including olives.  Check on shrimp if it is red/orange remove from heat.  Pour out hot water and add cool water.  Cut the shrimp into 3 – 4 pieces.  When you are done add to bowl.  Now you can add vinegar and olive oil. Mix with a large spoon and serve.

Yummy Blueberry Pancakes!

Made some Blue Berry Pancakes for my little one.  I added some bananas and strawberries.  They were delicious.

Pancake Recipe

1 cup of Pancake mix                                                                                                                                                                     1 cup of milk                                                                                                                                                                                   1egg                                                                                                                                                                                                                   1tablespoon of butter                                                                                                                                                                     1 teaspoon of vanilla extract                                                                                                                                                           1 teaspoon of cinnamon                                                                                                                                                                 1 cup of strawberries                                                                                                                                                                                       1 banana                                                                                                                                                                                       1/3 cup of wild blueberries                                                                                                                                                                                           1 cup of Maple syrup

Mix dry ingredients with milk and egg in a bowl. Add blueberries to pancake mix.  Place 2 tablespoon of butter in a medium hot pan. Use a 1/3 measuring cup to scoop up the pancake mixture into the pan.  Turn the pancake over when you start to see the bubbles surfacing the pancake.  Slice strawberries and bananas and place on pancake.
