Recipe
2 cups of Short Grain Brown Rice (Lundberg brand)
1/4 of a cup of red/green lentils
1/2 cup of Sweet Pepper (green,yellow and red)
2 tablespoon of Sofrito
1/2 cup of Asparagus
1 Tablespoon of Olive Oil
1 Teaspoon of Plum Sauce
1 Tablespoon of Soy Sauce
In a rice cooker add olive oil, sofrito and lentils. Sautee the ingredients for 2 minutes then add the brown rice. Cook brown rice in 3 1//2 cup of water or broth preferably in a rice cooker.
Dice your vegetables. Pour olive oil in hot pan and place your vegetables inside. Add the plum sauce and soy sauce, stir vegetables for 5 -7 minutes until you see vegetables glistening. Remove from heat. When rice is fully cooked serve yourself a plate and pour veggies on the rice. Enjoy!
